FOR A GREAT SALMON BBQ
Marinate salmon and refrigerate for one hour or longer if a stronger taste is desired. For an extra bit of flavour, try adding a shot of Rye Whiskey or Beer to marinade.
FOR A BC SMOKED SALMON FLAVOUR
When salmon is almost done, slip about 12 Alder leaves under the grill. Close lid and smoke for 2 to 3 minutes.
FILLETS OR FULL SIDES
Preheat grill to medium heat. Place salmon skin side down onto the grill. BBQ for about 5 minutes. Separate salmon from skin and turn salmon back over onto skin. Turn as necessary and baste often. Salmon is done when opaque. If the skin has been removed slightly oil grill.
STEAKS
For salmon steaks, oil grill and BBQ in regular manner. Baste often.
BC SALMON BURGER
Put some BBQ Salmon in a bun, top it off with a bit of sauce. The kids will love it.
PAN FRY-STIR FRY
Marinate fish. Place salmon in pan with a small amount of marinade. Use medium heat. Baste after turning. Salmon is done when flaky. Can also be added to your stir fry.
TO BAKE
Marinate fish as above. Preheat over to 350. Bake uncovered. Baste often.
MICROWAVE
No need to marinate. Cover salmon and cook on high for about 2 minutes. Time will vary according to size of fish.When salmon is done pour sauce over fish for an excellent glaze.
