Yield: 1/2 cup dressing
This fruity slightly spicy dressing is great on spinach salad.
- 2 Tbsp. Umi’s Kitchen Mango Chatni
- 2 Tbsp. red wine vinegar
- 2 tsp. grainy mustard
- 1/4 tsp. curry powder
- 2 tbsp. canola oil
- Salt and freshly ground pepper, to taste
- Combine all ingredients in a blender. Blend until smooth.
- Serve over greens with diced apple or pear. Top with toasted pecans or cashews and crumbled goat cheese.
